Encapsulation is understood as a technique of "encapsulating" a material / active substance in a microstructure and a nanostructured through the "sealing" of these materials / active substances of the active agent (core material). in another substance (substrate / carrier material).

Applying encapsulation technique to limit the disadvantages of natural compounds such as: contain bioactive substances that are unstable, unstable, sensitive to temperature, pH, light and oxidation, so when applied. In particular products, these active ingredients, flavors are not stable due to agents or environments in different products, they may be denatured or reduce the activity of the active substance, which will reduce effective or even denaturing products to produce undesirable effects.
Eletrospinning is a technique for fabricating nanofibers by applying high voltage to nanoscale polymer fibers. The process is divided into 3 stages with liquid injection from the surface of the deformed particle evaporation and formation of fibers. The whole process begins when high voltage is applied separating the charged molecules. Charged molecules with polarity move towards the particle surface and increase their density, with an increase in surface charge density against surface tension causing surface deformation. As the deformation increases, at some point a stream of solution is transported between the two poles, the solvent will evaporate during transport. Parameters include voltage, current rate, electrode spacing and polymer concentration, to adjust electrochemical conditions for different applications.
